Grilled Chicken Yucatan Style {Pollo Asado a la Yucatan}
INGREDIENTS
- 3 - 4 lbs. Chicken Thighs
- SALSAOLOGY Pibil Sauce
METHOD
- Place chicken in a receptacle and pour 3/4 of the Pibil Sauce jar. Reserve the remainder for later. Combine chicken and sauce until every thigh is covered with the sauce. Cover and refrigerate. Let chicken marinade for a minimum of 15 minutes, but the longer it marinates the better!
- Heat grill up to 400 degrees Fahrenheit. Once ready, place chicken thighs skin side down on the grill. Allow for each side to cook 11 minutes if boneless and 22 minutes if bone in. Once the skin is charbroiled and the thighs are cooked to temperature (approx. 160 degrees internal temperature).
- Serve chicken thighs with rice and beans. Top with pickled red onions and enjoy with tortillas. You can also cut chicken thighs into pieces and use to make tacos or burritos!
