Puebla, Mexico

Tinga originated in Puebla in the late 1800s, with several variations documented in a Pueblan cookbook as early as 1885. The word tinga comes from the Indigenous Náhuatl language and means “shredded,” referring to the tender shreds of meat traditionally used in this classic preparation.

While tinga is now enjoyed throughout Mexico in many forms, the most recognized version is tomato- and chipotle-based—savory, gently smoky, and deeply comforting. Our sauce reflects that traditional Puebla-style character, delivering layered flavor in a format designed for modern kitchens.
