Tamarind is a pod fruit most commonly associated with Asian and Indian cuisine, yet, it is one of Mexico’s most beloved ingredients. Interestingly enough, Jalisco happens to be one of the biggest cultivators of tamarind in the Americas; brought from Asia into Puerto Vallarta, Jalisco. by way of the Spanish colonizers. Incidentally, Jalisco’s tropical ecosystem provided ideal growing conditions for tamarind; thereby becoming a staple ingredient in the region. In Mexico,tamarind is used all over the country to make agua fresca, sorbets and sweets; however, it's also used in savory recipes. When paired with the earthy ancho chile, which is one of the chiles in the mole sauce triad - the combination yields a palpable experience of reimagined Mexican inspired flavors.
